- 3 cups corn meal
- 2 eggs
- 2 tablespoons baking powder
- 2 tablespoons kosher salt
- 3 tablespoons raw sugar
- 1 cup shredded sharp yellow cheddar
- 1 cup shredded Smoked Gouda
- 4 ounces cold skim milk
- 2 scallions, finely chopped
- 8 slices Schmacon™
- 1 ounce olive oil
Preheat oven to 325°F. In a mixer, blend together all the ingredients (except olive oil and Schmacon™) just until mixed.
Coat a pie pan with the olive oil, then pour the mixture into the pie pan. Weave Schmacon™ strips over the top.
Bake at 325°F in a conventional oven until the cornbread is firm.
