Beer Bacon Brats

"We thought bacon with our beer brats was only a dream, because soaking the brats in the malty beer bath would wash out the salty succulence of the bacon. No more. The solution is brats wrapped securely in bacon then submerged only about halfway."

Place deep aluminum tray on grill. Add 1/4 cup of beer per brat so they are about half covered. The idea is to let the brats absorb the beer flavor without drowning the bacon.

While grill reaches 350°, wrap each brat in a thick-sliced piece of bacon. Hold in place with toothpick and lower into beer.

Increase heat and boil for 15 minutes (turning once) or until brats are cooked.

Remove brats from beer and place on grates to sear.

To serve, remove toothpicks, slap onto toasted buns and add condiments of choice, such as sauerkraut, onions, cheese and brown mustard.
