1 pound thick sliced pepper bacon
1 package brown sugar
1/2 cup black pepper, or to taste
Step 1: Cut your bacon in half for easier handling.
Step 2: Mix the brown sugar and pepper in a large bowl, and then mix in the bacon.
Step 3: Mix well with your hands and set it aside. As the sugar melts, give the bacon a few turns in the bowl. You’ll see the sugar will liquefy in an hour or so. When it does, mix the bacon well, and you’re ready for the Bull Racks.
Step 4: Place on the racks, and grill for 1 hour at 275°F. Time will vary a little by the thick-cut of bacon you use and how well you like your bacon done.
Step 5: When the bacon is done pull it out and let it COOL. The sugar glaze is HOT and will stick to you. You will be amazed by how it just melts in your mouth.
