½ small pineapple, peeled and sliced into wedges (about 2 cups sliced)
1 small red onion, sliced
2 tablespoon extra-virgin olive oil, divided
1.25 ounce packet La Preferida Chorizo Seasoning, divided
1 pound pork tenderloin
1 tablespoon fresh lime juice
8 corn tortillas, warmed
Garnish: fresh cilantro, diced avocado, sliced jalapeño, sour cream, hot sauce
Preheat the oven to 400°F and line a large baking sheet with parchment paper.
Toss pineapple and onion with 1 tablespoon oil and 1 teaspoon seasoning.
Place pineapple and onion onto the baking sheet in a single later, pushing to the edges of the pan.
Rub the remaining tablespoon oil over the pork tenderloin. Coat with 2 tablespoons seasoning and place in the center of the baking sheet.
Roast until pork tenderloin reaches an internal temperature of 140°F, about 20 to 25 minutes.
Transfer pork to a cutting board and let rest for 10 minutes before slicing.
Serve in warmed tortillas with onion, pineapple and garnishes of your choice.
