Peanut & Cracker Jack Bars

Makes: 12

 

1 cup melted butter

1 ¼ cups brown sugar

2 eggs

1 teaspoon vanilla

½ teaspoon salt

2 cups flour

½ cup chopped salted peanuts

3 heaping cups Cracker Jacks

¼ cup chopped salted peanuts

Preheat the oven to 350°F and butter a 9 x 13-inch baking pan; line with parchment paper, letting about 1 inch  of paper hang over two sides. Set aside.

In a mixing bowl, beat together the melted butter and brown sugar until smooth. Add the eggs, one at a time, beating well after each. Mix in the vanilla and salt; add 2 cups flour and beat until just incorporated. Gently fold in ½ cup chopped salted peanuts and spread the batter evenly in the prepped pan. Sprinkle with Cracker Jacks and ¼ cup chopped salted peanuts, pressing down gently to adhere.

Bake 25–30 minutes, until golden brown and firm to the touch. Set aside to cool. Remove from the pan using the parchment paper and cut into squares.
