"If you’re looking for a breakfast that hits all the marks—easy, satisfying, and doesn’t drain your wallet—this Mexican Breakfast Tostada is it. It’s a budget-friendly recipe made with everyday staples like refried beans, eggs, and salsa, but still feels like something you’d order at your favorite brunch spot. Under $15 to feed four? Say less."

Prep Time: 5 minutes Cook Time: 15 minutes Servings: 4

8 tostada shells

1 (15 oz) can La Preferida Refried Black Beans (Low Fat or Authentic)

1 (4 oz) can La Preferida Diced Green Chiles

8 large eggs

½ cup La Preferida Salsa Verde (or your favorite variety)

½ cup Mexican crema or sour cream

¼ cup chopped fresh cilantro

Optional: La Preferida Organic Mild Jalapeño Nacho Slices

In a pan over low heat, warm refried beans. Stir in diced green chiles until combined. Set aside.

In a separate skillet, cook eggs to your liking (scrambled, over-easy, etc.).

Spread about 2 Tbsp of the bean mixture onto each tostada shell.

Top with one cooked egg.

Drizzle with salsa and crema. Sprinkle with cilantro and jalapeños, if desired.
