Luscious Lobster & Bacon Mac ‘n’ Cheese

"Who knew this primo comfort food could get more comforting? That’s the magic of bacon. Now add in the luxury of lobster and you have a signature dish—side or entrée."

Serves: 4–6

 

For Crumb Topping:

¼ cup panko breadcrumbs

¼ cup Parmesan cheese

2 teaspoons Simply Delicious Seafood Rub

 

For Lobster Mac ‘N’ Cheese:

2–3 raw lobster tails, fresh or frozen, cleaned and halved lengthwise

2 teaspoons olive oil

3 cups heavy whipping cream

2 tablespoons crème fraiche

1 clove garlic, crushed

½ teaspoon salt

¼ teaspoon pepper

½ cup grated sharp Cheddar cheese

1 cup grated Havarti cheese (or any easy-melt cheese)

½ cup grated Gouda cheese

½ cup grated Parmesan cheese

1 tablespoon Simply Delicious Seafood Rub

4 strips cooked bacon slices, chopped

8 ounces (2 cups) cooked pasta, macaroni, elbows or curls

2 tablespoons cold butter, chopped

 

For Simply Delicious Seafood Rub:

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon ground sweet paprika

1 tablespoon dried thyme

1 tablespoon celery salt

1 tablespoon ground sage

¼ teaspoon cracked black pepper

For the rub, in a small bowl, mix everything well to combine. Store the extra in an airtight container for 1–2 months.

Prepare a grill for direct heat and preheat it to 390°F.

To make the Crumb Topping, in a small bowl, combine the panko breadcrumbs, Parmesan cheese, and Simply Delicious Seafood Rub. Set aside until needed.

Next, prepare the lobster. Brush the halved lobster tails with the olive oil. Leave the flesh in the shell so the lobster meat retains moisture. Then grill the tails over high heat for 15 minutes, turning frequently or until the internal temperature reaches 130°F. Take them off the grill and set aside, covered with foil, until needed.

Preheat a 10-inch cast-iron skillet directly over the fire and pour in the cream, crème fraiche, garlic, salt, pepper, all the cheese, Simply Delicious Seafood Rub, and bacon. Simmer gently for 5 minutes or until the ingredients are well combined, stirring frequently.

Remove the lobster tails from their shell and chop them into small pieces. Add the pieces and the cooked pasta to the sauce. Sprinkle the crumb topping over the pasta and top with the chopped butter pieces.

Now prepare a grill for indirect heat and preheat to 350°F. Bake over indirect heat until golden brown, approximately 30 minutes. Keep warm until ready to serve.
