1 pound leftover pulled pork, coarsely chopped
2 cups of your favorite barbecue sauce
3 tablespoons butter, softened
12 canned biscuits
2 cups shredded sharp Cheddar cheese
3 scallions, thinly sliced
Set up your Big Green Egg for indirect grilling using the convEGGtor. Preheat the Big Green Egg to 400°F.
While your Big Green Egg is preheating, mix the leftover pulled pork with the barbecue sauce in a large bowl.
Rub each well of a muffin pan with butter to grease the pan. Next, flatten each biscuit and push it into the bottom and sides of each well of the muffin pan. Fill the biscuit cups about one-third full of the pulled pork mixture, and top with the Cheddar cheese.
When the Big Green Egg has preheated, set the muffin pan in and bake for 8–10 minutes, until the biscuits are nicely browned, and the cheese has melted. Remove the pan and allow it to cool for 5 minutes. Remove the BBQ Cups from the muffin pan and top with the scallions.
