Chocolate & Bacon Salted Caramel Brownies

Chocolate & Bacon Salted Caramel Brownies

"No one could even dream a better tailgating dessert. A half pound of crisp bacon mixed into a rich, moist chocolate brownie. Then topped with a homemade quick, salted caramel made from butter, brown sugar and heavy cream. Heavenly."

Brownies:

24 ounces semisweet chocolate chips

18 ounces all-purpose flour

5 ounces cocoa powder

2 teaspoons baking soda

2 teaspoons salt

24 ounces brown sugar

18 ounces butter

6 eggs

1/2 pound bacon cooked, finely chop some and save a few bigger pieces for garnish

 

Quick Salted Caramel:

1/2 pound butter

1/2 pound brown sugar

2 cups heavy cream

1/2 teaspoon salt

For the Quick Salted Caramel:  Melt butter in a sauté pan. When melted, add the brown sugar. Once the mixture has combined and is melted, add the heavy cream, and mix well. Add the salt and allow to cool.

For the Brownies: Melt chocolate chips and butter together. Meanwhile, mix brown sugar and eggs together.

Add the dry ingredients to the brown sugar and egg mixture. Add the melted chocolate and butter mixture. Add the chopped bacon (save the bigger pieces for the end).

Spread evenly over a half sheet pan and bake at 325°F for 15 minutes or until done.

Drizzle some of the salted caramel over the brownies when warm so its melts in a little. Allow to cool and cut. Drizzle a little more caramel and top with bacon pieces.
