"A smoky, cheesy, beefy bowl of dipping goodness that surprises with a playful bite from the jalapenos and a nip or two from the sweet, but just-hot-enough barbecue sauce."
1/3 cup ground sirloin
1/2 cup Rufus Teague Touch O’ Heat BBQ Sauce + more for garnish
1 can diced red tomato
1/3 cup pickled jalapeno, diced
1 12-ounce can light beer
1 pound cheddar cheese, shredded
1/2 pound pepper jack cheese, shredded
1 teaspoon cilantro
Brown the ground sirloin on medium heat in a large skillet with some oil. Add the barbecue sauce. Sauté for about a minute.
Add the tomatoes and pickled jalapenos, and stir. Add half of the beer. Stir some more. Let the mixture reduce by about half.
Slowly whisk in the shredded cheese. Add the rest of the beer and keep whisking.
Once the cheese is fully melted, garnish with more barbecue sauce and cilantro. Serve immediately with some tortilla chips and warmed tortillas.
