1 egg white
2 ounces gin
1 ounce fresh lemon juice
1 teaspoon white sugar or 1/2 ounce simple syrup
Champagne, to top up
Lemon slice, to garnish
In a shaker, add the egg white, gin, lemon juice and sugar or simple syrup, and fill with ice. Shake vigorously. Strain into a highball glass filled with ice. Top up with Champagne, and garnish with a slice of lemon.
