"I attended a friend’s wedding with a few other friends in Flagstaff a few years ago. We camped out just outside of town and came down into town for the wedding a day early. Walking around town, we came across this very kitschy but also very cool barbecue joint that served up the very best sweet potato fries I’d ever had. This is my approximation of that dish."
1–1½ pounds sweet potatoes
1/4 cup olive oil
1/2 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon cinnamon
PREHEAT oven to 425°F. Line a baking sheet with aluminum foil.
PEEL the sweet potatoes. Cut into strips that are about half an inch wide on each side.
PLACE the sweet potatoes into a large mixing bowl. Add oil, salt, paprika and cinnamon. Stir to thoroughly coat the fries. Spread the fries out onto the baking sheet in a single layer.
COOK for 30 minutes, turning once, until slightly browned. Transfer immediately to a paper towel-lined plate and serve warm.
