Smoked Sausage and Veggie Foil Packets

"This mouthwatering foil packet is perfect for grilling on-site at a tailgate party and even easy enough to pack up and bring to the tailgate!"

1 pound smoked sausage, coined

2 cups baby red or gold potatoes, quartered

1 small zucchini, coined

3 sweet corn on the cob. sliced into thick rounds

1 red bell pepper sliced thinly

2 tablespoons of minced garlic

½ large purple onion, chopped

4-6 tablespoons of butter

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon garlic pepper

1 teaspoon seasoned salt

1 teaspoon dried parsley

Preheat grill to medium-high, 450 degrees.

Prepare 4-6 large sheets (about 2 feet each) of heavy-duty foil, lightly spray with cooking spray.

Coin the sausage and the zucchini ½ inch thick. Quarter the potatoes, slice the red bell pepper into thin slices and slice the corn into 1-inch discs.

Add the sausage and the vegetables to a large bowl. Add the seasonings and toss until well combined.

Prepare packets by dividing the mixture evenly onto each of the sheets of foil. Place one tablespoon of butter on top of the mixture and seal the packs tightly. Leave a little space for some air to escape.

Grill for 20-25 minutes or until veggies are tender, flipping halfway through cook time.
