Pommes Pailles or Skinny Frites

Makes: 2–4 servings


2.2 pounds of Bintje, Yukon Gold or similar potatoes

8 1/2 cups cooking oil

Table salt

Sea salt crystals

Peel and wash the potatoes.

Use a mandolin to cut them into thin slices, and then cut each slice into fine sticks about 1/8-inch wide. Soak in cold water for 30 minutes, and then rinse several times. Dry carefully with a clean, dry cloth.

Heat the fryer to 320°F.

Put the frites in the basket, and cook for 5 minutes.

Spread the frites onto kitchen paper, and then sprinkle with table salt.

Tip into a serving dish, add a sprinkle of sea salt, and eat straightaway.
