Lobster and Brie Grilled Cheese Sandwiches

"Grilled cheese. The all-American comfort food. Adding lobster sounds like a betrayal to this simple classic. But no. These open-face, grilled sandwiches meld sweet lobster with the creaminess of equally upscale Brie cheese for a wondrous oddity of an American basic."

Serves: 6 as appetizer

 

1 lobster, steamed (ask your supermarket to do this), meat removed and torn into bite-size pieces

6 slices French bread, cut from loaf on the diagonal

grainy mustard

1/4 pound Brie cheese (and yes, you can leave the rind on)

freshly ground pepper

Preheat oven to 425°F. Line a cookie sheet with foil.

Spread the bread slices lightly with the mustard.

Divide the lobster chunks among the bread slices, and top with cheese.

Bake until the cheese is melted, 5­–10 minutes. Watch it closely.

Remove the sandwiches to a platter with a spatula. Grind pepper on top and serve at once.
