1 package (12.8 ounces) SeaPak® Salmon Burgers (4 patties), cooked according to package directions and cooled
2 cups Greek yogurt
4 cloves garlic, minced
1 cucumber, grated on the large side of a box grater, well drained
4 tablespoons olive oil
2 tablespoons vinegar
Kosher salt
Fresh ground black pepper
1 tomato, cut into 8 wedges
4 Greek flatbreads or pita breads, heated in a skillet
Flake the cooked and cooled SeaPak® Salmon Burgers into a small mixing bowl, and set aside.
In a separate mixing bowl, stir together the yogurt, garlic, grated cucumber, olive oil and vinegar. Salt and pepper to taste. Fold in the flaked salmon. Serve with tomato wedges and warm Greek flatbread.
