"Jerk is a style of cooking native to Jamaica in which meats are dry-rubbed with a fiery spice mixture called Jamaican jerk sauce and then cooked in a pit, on a grill or on an open fire. Jerk refers to the technique, the spice mixture, and the finished product."
- 1 6-pound roasting chicken
- 1 tablespoon salt
- 1 small onion, grated very fine
- 1 teaspoon paprika
- 2 teaspoon garlic powder
- 1 teaspoon soy sauce
- 3 tablespoons Busha Browne Jerk Seasoning Rub
Rub the whole chicken with the salt. Grate the onion and rub it into the chicken.
Mix the paprika, garlic powder and soy sauce, and rub that mixture into the chicken. Rub the Busha Browne Jerk Seasoning Rub all over the chicken and allow the chicken to marinate for at least 2 hours.
Roast in oven at 350°F for 1 to 1 1/2 hours.
