Bacon Bliss Pizza Pie

"Indulge your taste buds with this incredible Bacon Bliss Pizza Pie that starts with a crust made from Greek yogurt and self-rising flour. Toasted crust is lightly brushed with extra virgin olive oil and gently sprinkled with pecorino Romano cheese. Bacon is layered on a bold tomato sauce with a Sicilian touch and fresh sliced mozzarella cheese. Topped with a crumble of chopped bacon, chopped sundries tomatoes, and chiffonade basil. The pizza is finished with a drizzle of aged balsamic vinegar."

Cook Time: 1 Hour Makes 4–6 servings

 

Crust:

2 cups self-rising flour

1 cup Greek yogurt

 

Sauce:

1/4 cup extra virgin olive oil

2 tablespoons Sicilian spice blend (I used Mie Radici)

1 tablespoon Greek oregano

1 28-ounce can crushed tomatoes

1 teaspoon salt

2 teaspoons sugar

4–5 sundried tomatoes, diced

 

Candied Bacon:

2 pounds sliced bacon

1 tablespoon BBQ rub (I used Three Little Pigs Touch of Cherry Rub)

1 cup turbinado sugar

1/4 teaspoon baking soda

1 tablespoon brown sugar

 

Additional Pizza Ingredients:

4 tablespoons aged balsamic 8–10 leaves fresh basil

1/2 pound fresh mozzarella Pecorino cheese

Sundried tomatoes

For the Crust:

  1. Combine yogurt and self- rising flour.
  2. Knead until smooth and allow to rest for 20 minutes.

 

For the Sauce:

  1. In medium saucepan, over low to medium heat, add two tablespoons olive oil and combine herb blends. Heat for about five minutes until flavors are infused.
  2. Add one can of crushed tomatoes.
  3. Increase to medium heat, then add sugar and salt.
  4. Continue cooking until sauce is reduced by one third. Remove from heat.
  5. Add diced sundried tomatoes to sauce, just prior to assembling on pizza.

 

For the Candied Bacon:

  1. Lay bacon on a parchment paper- lined baking sheet.
  2. Mix BBQ rub, turbinado sugar, baking soda, and brown sugar.
  3. Coat bacon with mixture.
  4. Bake at 350° F until bacon is sticky and cooked.

 

For the Pizza:

  1. Spray grill with nonstick cooking spray.
  2. Separate dough in half and roll out to a quarter of an inch.
  3. Place prepared dough on prepared grill and cook both sides until golden brown, about 2 minutes. Remove from grill and brush with olive oil.
  4. Spread prepared pizza sauce evenly over crust.
  5. Dress with fresh mozzarella and Pecorino cheese and sprinkle with Sicilian spice blend.
  6. Place in oven at 425°F for about 5 minutes or until cheese begins to brown.
  7. Remove from oven and dress with candied bacon, chiffonade fresh basil, and sundried tomatoes, then drizzle with aged balsamic.
