Bacon Bleu Cheese Buffalo Chicken

"The hot, spiciness of buffalo sauce and the creamy tang of Blue Cheese go hand in hand like salt and pepper. Usually used for chicken wings and dip, this recipe amplifies the combo and turns it into a full course meal that is sure to please!"

Cook Time: 35 - 50 minutes Serves 2

 

2 chicken breasts

20 strips of bacon

2 tbsp. of Blue Cheese

Dry rub (Vision Grills Kansas City rub is recommended)

1 cup of hot sauce (use desired brand)

Make the buffalo sauce and set aside until chicken is cooked. To make the buffalo sauce, melt 2 tbsp. of unsalted butter and add a cup of hot sauce. Make sure to keep warm and stir occasionally.

Set grill to 300°F

Butterfly the 2 chicken breasts by cutting down the center and open them up. Do NOT cut them all the way in half. Each breast must remain connected.

Lay the breasts flat and cover one side with blue cheese. Once covered, fold other side of chicken back over, to regain its original form.

Wrap each breast in bacon (about 10 strips for each breast). We recommend latticing them together to create a “bacon weave.”

Cover the breasts with the Vision Grills Kansas City dry rub.

Place chicken breasts on the grill. Let cook for 30-45 minutes. You want the bacon to look crispy and for the chicken’s internal temperature to be 165°F.

When the chicken is ready, baste with the buffalo sauce. Once thoroughly coated, close the lid, close vents, and let sit for another 2-3 minutes.

Remove from grill, slice ‘em up, and be amazed!
