Pimento Cheese

Pimento Cheese

 

8 ounces cream cheese

2 tablespoons mayonnaise

3 cups sharp cheddar cheese, grated

1/4 teaspoon salt

Ground black pepper to taste

1/4 cup sweet yellow onion

1/4 cup roasted pimento pepper, diced (or roasted red bell pepper)

Tear the cream cheese into pieces and add directly into the bowl of a robo coupe or other food processor or electronic mixer. Add the mayonnaise and onion, and then pulse until the cream cheese is broken up and no large lumps are remaining. Add the seasoning, red bell pepper and 2 cups of the cheddar, and pulse until incorporated, approximate 3 to 5 times. Pour into a large mixing bowl, and add the remaining cheddar, folding in with a rubber spatula.

Serve with your favorite crackers.

For Grilled Pimento Cheese: Take two slices of thick-cut Texas Toast (or your choice of 
bread) and spread one tablespoon of butter on one side of each slice. Spread the desired amount of pimento cheese onto the unbuttered sides of the bread, and place together with the buttered sides facing out. Heat a pan on medium heat and toast the sandwich on each side until the outside is warmed but the middle is still cool. Serve, and enjoy.
